Blueberry Matcha Pancakes

I woke up today and decided I was ready for some blueberry pancakes. Blueberry pancakes always remind me of home and being so far away from family, I tend to crave them when I am most homesick. But this time around, I wanted to add a twist to them so I decided to make them with Vital Proteins Matcha Powder!

I use a basic pancake recipe from Taste of Home:

  • 1 cup all-purpose flour

  • 1 tablespoon sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 large egg

  • 3/4 cup milk

  • 1/4 cup shortening or butter, melted

  • 1 scoop of Vital Proteins Matcha Powder

  • 1/2 cup of fresh blueberries

In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and shortening; stir into dry ingredients just until moistened. Add in half a cup of blueberries and 1 scoop of Vital Proteins Matcha

Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
