I love a good energy bite…especially when it includes peanut butter. Pic’s peanut butter has only TWO ingredients: peanuts and salt. That is IT. And it is DELICIOUS. You can order it online and enjoy it for yourself HERE. I was recently gifted a jar of their peanut butter and was thrilled without it tastes! I couldn’t wait to decide what to make and I settled on energy bites.

With a full time job, the faith feast, friends, and more — I am always on the hunt for quick and easy things to snack on that are mess free. I try to avoid pop tarts and chips when I can. This nutty treat gives me both the sweet and savory. I modified this recipe from Gluten Free on a Shoe String.


2 cups Raw cashews

1/2 teaspoon kosher salt

2 1/2 cups (160 g) unsweetened coconut flakes

1 1/4 cup of Pic’s Peanut Butter

1/2 cup honey

1 tablespoon of Super Seed and Ancient Grain Blend

1 tablespoon of Flax Seeds

1 Tablespoon of Coconut Protein Powder

1/2 tsp of vanilla extract


  • In the bowl of a food processor fitted with the steel blade, place the raw nuts, salt, and about half of the coconut flakes. Pulse the mixture until the mixture resembles coarse crumbs!

  • Heat the honey and the peanut butter in a microwave safe bowl for 30 seconds. Then add the honey and the peanut butter into the food processor with the nuts and the coconut. Add in the other dry ingredients as well and then mix until well blended.

  • Grab a spoon and scoop out some mixture and roll into one inch balls. Place on parchment paper or SILPAT and chill for an hour or so. FEAST!
