I love a good biscuit recipe and this one did not disappoint! I modified it a bit from the original and it came out AMAZING!
3 cups (360 grams) all-purpose flour
1 1/2 tablespoons baking powder
1 tablespoon sugar
1 teaspoon salt
8 tablespoons (115 grams) very cold unsalted butter
1 1/2 cups (340 grams) almond milk
Preheat the oven to 425° F. Line a baking sheet with a SILPAT.
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Cut the butter into the dry ingredients using a fork or pastry cutter until it's a crumbly mixture.
Add the wet ingredients to the dry ingredients and stir the dough with a fork until it is somewhat evenly moistened.
Turn the dough out onto the parchment-lined sheet, and fold it over onto itself until there aren't any dry spots remaining. Turn the dough down to a rectangle about 2 inches high.
Using a sharp knife or a pizza cutter and cut the dough into 2" squares and separate them slightly on the baking sheet.
Bake for about 12-15 minutes, or until golden brown. Let cool slightly, then eat with butter, jam, or honey!
